make or buy some really good beef flavoured gravy, prepare two slices of toast and layer them with thinly sliced beef then pour over the gravy and get a knife and fork! Delicious for supper or lunch, satisfies beef cravings and warms you up!
For a cold sandwich that you don't mind going to some trouble over..take a couple of tomatoes and an onion, slice them and layer them into a baking dish, sprinkle over some dried or fresh herbs, pepper and a drizzle of olive oil then roast them for half an hour at 170c. let them cool and use them with thinly sliced beef and a pinch of salt on buttered bread..butter not margarine. By the way, you can always roast the tomatoes and onion at the same time as the joint and use them the following day.

I had a new variation of a roast beef sandwich from the deli section at Dominicks'... It was roast beef with spinach leaves and crumbles of blue cheese on a foccia bread...it was heavenly. I'm gonna try to make one on my own, one day.

How about a Surf and Turf club? You need a few cooked shrimp with Cajun spice on them, a little smaller than cocktail shrimp. Cut in half. Toast any bread you prefer, 3 slices. Cook some bacon. Buy some really good roast beef Thumann's if you can. OK! ready to assemble. Bread, 1000 Island dressing, shrimp, bacon, lettuce, bread, more 1000 Island, tomato, roast beef, 1000 Island on top bread. Cut and enjoy.

a serious browning before cooking roast, with a nice even flavor of seasoning blend rubbed all over the meat. And of course, depending on the cut used, perhaps a quart of beer added to tenderise. And finally, some really goof, fresh horseradish.

If we have some leftover roast beef, we love this sandwich with good fresh pumpernickel bread. Slice the beef, add thinly sliced sweet onion and a good 1/4" slice of Maytag bleu cheese.

Yummy!

HOT ITALIAN ROAST BEEF SANDWICHES

1 tbsp. butter
1 boneless sirloin tip beef roast (5 pounds)
1 can (28 ounces) tomatoes with juice, cut up
1/3 c. water
1 tbsp. ground thyme
1 to 3 tsp. crushed dried red pepper
1 tsp. salt
Semi-hard rolls

In a Dutch oven, melt butter over medium heat. Brown roast on all sides. Add remaining ingredients except rolls; cover and simmer until the roast is tender, about 3-1/2 to 4 hours. Add additional water, if necessary, to keep roast simmering in broth. Remove meat from broth and reserve broth. Let the meat stand 20 minutes. Trim any fat and thinly slice meat. When ready to serve, reheat sliced broth. Serve on rolls.
Makes about 20 sandwiches.

Thinly slice leftover roast beef. Saute some onions, bell pepper slices, and mushrooms. Toast bread, top with roast and gravey, add sauteed veggies. Enjoy this. It's fabulous.
